Beef.  It’s been my family’s business since the late 1700s.  From generation to generation land and traditions have been passed down.  Here in Rich Valley, cows are free to roam and graze as they please.   During the winter months, when the fields run out of grass the cows are fed hay (dried and rolled grass), silage (the chopped up entire green corn plant which is fermented during storage), and occasionally fed grain protein when food supplies run low.

Each cow produces roughly 520 pounds of beef.

We’re selling 1/4 cows for $900.  The weight of a 1/4 cow obviously depends on the animal, but it usually comes out to around 120 – 135 lbs.  This comes out to roughly $7.50 – $6.60/pound.

Each 1/4 cow includes a lot of ground beef and stew meat, beef roasts (pot roast, top & bottom rounds, rump roast, blade roasts, etc…).  It also includes some ‘thin cuts’: flank & skirt steak, brisket & short ribs, as well as some steaks!  Limited quantity of specialty cuts (liver, heart, tongue, etc…) are available upon request on a first come, first serve basis.
